Without crust, this dessert resembles apple pie and is easier on the waistline. For a different twist, combine the chopped apple and cinnamon, and heat for 45 seconds in the microwave. Next, combine with the ice cream.
1/2 C Organic Vanilla Ice Cream
1/2 Apple (Honeycrisp, Ambrosia, Fuji, Pink Lady, Red or Golden Delicious for sweet; Granny Smith for tart), coarsely chopped
1/2 tsp Ground Cinnamon
1 T Raisins
1/2 tsp Muesli
1 tsp Semi-Sweet Chocolate Chips
1/2 tsp Banana Chips, crumbled
1/2 Ginger Snap Cookie, crumbled
1. Place serving bowl in freezer for about ten minutes. Chop the apple.
2. Scoop 1/2 C vanilla ice cream and place in chilled bowl. Top with cinnamon and chopped apple.
3. Stir ingredients until evenly combined, place back in freezer for five minutes.
4. Sprinkle with raisins and granola, add any additional toppings (moderation is key), and enjoy!
