Crunched for time? Limited ingredients? Fear no more, with a little creativity you can transform frozen waffles from lackluster to spectacular. Start with some yogurt and raisins; fresh fruit will further elevate the dish. Mix it up using different flavors of yogurt and types of fruit. Try them without using syrup; the yogurt adds the desired sweetness without adding empty calories.
2 frozen waffles (try Van’s Natural Foods multigrain waffles–160 calories for two)
1/4-1/3 C yogurt of choice (Noosa Yoghurt is used here–it’s thick, creamy and contains all-natural ingredients. Amazing.)
Handful of dried fruit
Optional (although preferred):
1/2 apple, chopped
3-4 large strawberries, chopped
Handful of berries
1. As waffles are toasting, chop fruit.
2. Place waffles on a plate and top with equal portions of yogurt, smoothing across all crevices.
3. Top with raisins, granola and fresh fruit (if available).
4. Enjoy with your favorite cup of coffee.
