Spice-Rubbed Chicken Wings with Spinach & Grilled Veggie Salad

Spice-rubbed wings and a hearty spinach salad, plus honey mustard dipping sauce

My cooking buddy and I decided to experiment with this wing recipe last night.  We don’t like skin on wings so this recipe was perfect.  I made my favorite salad to compliment the dish:  spinach tossed with grilled red bell peppers, onions, mushrooms and corn, topped with a simple balsamic/olive oil dressing and feta cheese.  To save time, grill the veggies while the wings are on.  Delicious!

Chicken Wings with Spiced Dry Rub:


1 lb Chicken Wings (skinned, rinsed & patted dry)
1 tsp Smoked Paprika
1/2 tsp Ancho Chili Powder
1/4 tsp Chili Powder
1/2 tsp Kosher Salt
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1/2 tsp Ground Cumin
Fresh Ground Black Pepper
2 T Extra Virgin Olive Oil

  • Combine spices, multiplying recipe for amount of chicken wings if needed.
  • Coat wings in olive oil & sprinkle dry rub over wings.
  • Grill for 18-20 minutes on medium heat until crispy & charred.

Honey Mustard Dipping Sauce:

2/3 C Dijon Mustard
1/4 C Sour Cream
1/4 C Honey
3/4 tsp Worstershire Sauce

  • Combine ingredients and mix well.
Fresh spinach and smoky grilled veggies with a simple yet perfect balsamic dressing

Spinach & Grilled Veggie Salad:

2-3 C Baby Spinach
1 1/2 Sliced Red Bell Pepper
1 Onion, cut in half & sliced
2-4 large Mushrooms, thickly diced
1/2 C Corn Kernels
2 T Balsamic Vinegar
1 T Extra Virgin Olive Oil
About 1 T Feta Crumbles
Nonstick Cooking Spray
Fresh Ground Black Pepper

  • Place bell pepper, onion and mushrooms on grill pan or large cookie sheet sprayed with cooking spray.  Sprinkle black pepper over veggies to taste.
  • Grill 10-12 minutes, tossing with tongs every few minutes until crispy.
  • Place spinach in a large bowl.  Combine dressings and pour over spinach.  Toss to coat.
  • Add grilled veggies and corn, and toss until combined.
  • Sprinkle with feta and sprinkle with fresh ground black pepper.  Toss to combine and serve!
